Some Dubai chocolate bars are a fifth pistachio. One is under nine percent. We read the back of every pack and put the ratios side by side.

Dubai chocolate went from a viral video to a shelf category in about two years. Türkiye now has more than a dozen versions of it, and they are not the same bar with different wrappers. Some are more than a fifth pistachio. One is under nine percent. The wrappers rarely tell you which is which, but the ingredient list always does.
We stock most of the Turkish brands, so we read the back of every pack and put the numbers side by side.
The short answer
- Most pistachio in a full-size bar: Patiswiss Juva, at roughly 21 percent of the bar.
- Most kadayıf, so the most crunch: Fiorella, at 10 percent.
- Best as a gift: Senso Gusto, which also lists whole pistachio pieces on top of its pistachio cream.
- Best known name: Godiva, and by some distance the most expensive per gram.
- Cheapest way to try it: Ülker, the lowest pistachio ratio here but the easiest to find.

Senso Gusto sits on its own line because it labels its filling differently from the others: the cream and the whole pistachio pieces are listed separately, so its cream figure is not directly comparable with a plain pistachio percentage.
Two numbers do most of the work here. Pistachio is the expensive ingredient, so it is the one brands cut when they need to hit a price. Kadayıf is the shredded pastry that gives the filling its crunch, and it fades over time, which is why a fresh bar tastes better than one that has sat in a warehouse.

Senso Gusto

The one we reach for when the bar is a gift. The blue box looks the part, and the filling is built differently from the rest: pistachio cream at 26 percent, then another 9 percent of whole roasted pistachio pieces on top of that, with 13 percent kadayıf. It is the only bar here that gives you pistachio in two forms.

Patiswiss Juva

The highest pistachio ratio of any full-size bar in this list. The pack states a filling of 33.5 percent, and that filling is 62 percent pistachio, which works out to roughly a fifth of the whole bar. If you are buying on ingredients rather than on the box, this is the one to look at first. Sold in the United States under the Patislove name.
Patiswiss Juva Dubai Chocolate, 200 g
Beyoğlu Dubaco

Seventeen percent pistachio and 7.5 percent kadayıf, which puts it near the top of the table without the premium packaging. Beyoğlu also makes the Dubaco range in smaller bars and in a dark chocolate version, so it is an easy brand to work through if you find you like it.

Fiorella

Ten percent kadayıf, the most of any bar here, so this is the crunchiest of the group. Fourteen percent pistachio. Fiorella is also the bar that our repeat customers ask for by name more than any other: people who like this particular flavour tend to order it again rather than try something else.

Bolci

Thirteen percent pistachio and the lowest kadayıf figure in the table at 3.2 percent, which makes for a smoother, less crunchy filling. Bolci is one of the older established chocolate makers in Türkiye, and like Fiorella it has its regulars. It comes in dark chocolate and in smaller sizes too.
Godiva

Fifteen percent pistachio, 5 percent kadayıf, plus something none of the others have: actual baklava pieces in the filling. It is comfortably the most expensive bar here per gram, and its pistachio ratio still sits below Dubaco's. You are paying for the name and the finish rather than for more pistachio.
One detail most people miss: Godiva was founded in Belgium, but it has been owned by the Turkish group Yıldız Holding since it was bought from Campbell Soup in 2007. Since 2016 it has sat inside pladis, the same company that owns Ülker. The most expensive bar in this comparison and the cheapest one share a parent.

Ülker

The lowest pistachio ratio in the table at 8.6 percent, and the most widely available. Ülker was one of the first big Turkish manufacturers to put a Dubai chocolate into mass production, and it sold heavily when the trend broke. Elit

A small bar with a big filling: the pack declares 60 percent chocolate and 40 percent filling, made up of 25 percent pistachio and 15 percent kadayıf. That is the highest declared pistachio figure in this comparison, in the smallest format. It is the one people put in lunchboxes and party bags, and it is our best seller by units for exactly that reason.

- Buying on ingredients: Patiswiss Juva for a full-size bar, Elit if the size does not matter.
- Buying as a gift: Senso Gusto, or Godiva if the recipient knows the name.
- You want the crunch: Fiorella.
- You want it smooth rather than crunchy: Bolci.
- Trying it for the first time: Ülker or Elit.
- Somewhere in the middle: Beyoğlu Dubaco, which is the best ratio per gram outside the premium boxes.
