As the first process, the washed fruits are peeled and taken to drying hangers in a hygienic environment. Drying period varies according to climatic conditions and is 1 to 2 months. At the end of the drying process, dried persimmon fruits are taken to cool and hygienic warehouses. After the fruits dry out, they become white. This is when the sugar in the white comes out. The longer they wait, the whiter they get. Whitening does not mean that it has never deteriorated.
