How to Make Dried Eggplant Stuffed Peppers with Olive Oil Recipe?

Ingredients For Olive Oil Stuffed Eggplant Pepper Recipe

  • 10 dried eggplants
  • 10 dried peppers
  • 2 cups hot water (400ml)
  • 1 cup rice
  • 2 large onions
  • 2-3 cloves of garlic (grated)
  • 4-5 tablespoons of olive oil
  • 2 tablespoons tomato paste
  • 1 tablespoon of pepper paste
  • 1 teaspoon salt
  • 1 teaspoon each of black pepper, mint, red pepper flakes
  • 3 tablespoons pomegranate syrup

 

How to Make Dried Eggplant Stuffed Peppers with Olive Oil Recipe?

  1. Boil the eggplants in a pot with plenty of water over medium heat for 10 minutes after they start to boil. At this stage, if you press on the eggplants with a colander, you will ensure that they get wet all over.
  2. While the eggplants continue to boil, add the peppers and continue boiling for another 5 minutes.
  3. After removing it from the fire, keep it in the water for about 10 more minutes, then drain it and pass it through cold water.
  4. Fry the chopped onion and grated garlic in olive oil until the onions turn pink.
  5. Then add the tomato paste and roast it until it starts to smell.
  6. Add the washed and drained rice and roast it.
  7. Add salt and spices, mix and add 1 cup of water.
  8. Cover the lid and cook for about 10 minutes until the rice absorbs the water, turn off the heat and add 1 tablespoon of pomegranate syrup and mix.
  9. Fill the eggplants and peppers with our mixture and place them in the pot. (It should be noted that we place the mixture tightly in a vertical way by closing the mouths of the stuffed peppers, leaving one finger space above the stuffed peppers.)
  10. Pour 2 cups of water and the remaining pomegranate molasses into the pot where we prepared the filling and pour this water over the dolmas.
  11. Cover the pot with a lid and cook over low heat for about 40 minutes until the rice is soft.
  12. After the first temperature of the cooked dolmas is removed, you can serve them cold or hot. Bon Appetit!

 

Tips and tricks

  • The dried peppers and eggplants should be neither too hard nor too soft after boiling.
  • You can place the boiled vegetables in the pot so that the mouth closes easily without filling the stuffing too much.
  • You can also prepare the stuffing of your olive oil stuffed eggplants and peppers with minced meat.
  • You can serve your stuffed dried peppers and eggplants hot or cold. When you serve it hot, yogurt will go very well with it.
