How to make Islim Kebab also known as Toothpick Kebab?
Islim Kebab is one of the famous dishes of Gaziantep but is made almost all of the city's of south eastern part of Anatolia. Islim Kebab is very easy to make and one of the do it at home kebabs that TurcaMart suggests to its shoppers. Let's go ahead and see what do we need as ingredients for Islim Kebab.
Islim Kebab Toothpick Kebab Ingredients List
- 1 lb ground beef
- 1 large Onion
- 1 Grade A Egg
- 5 Tablespoons of Knorr Meatball Mix (Kofte Harci)
- 9-10 Sprigs of Parsley
- 4 large Eggplants
- 3 gloves of Garlic
- 3 Tomatoes
- 1 table Spoon of Tat Tomato Paste
- 10 Tablespoons of Taris Natural Extra Virgin Olive Oil
- 1 teaspoon of Vinegar
- 2 bunches of Tomatoes
- 2 Green Peppers
- 1 teaspoon of Sugar
- 1 pinch of Billur Pink Himalayan Salt
- 1 pinch of Bagdat Black Pepper
- 1 pinch of Bagdat Oregano
- 1 pinch of Dry Parsley
- Preheat the oven at 350–375 °F in grill + fan mode.
- Add 1 grated onion, 1 egg, 5 tablespoons of meatball spring and 2 tablespoons of olive oil to a pound of ground beef and knead.
- After the flavors meld, add 10 finely chopped parsley sprigs and continue kneading.
- Take approximately 2 oz pieces from the meatballs and roll them. In this way, approximately 15 meatballs will come out.
- Peel only two sides of the eggplant with a peeler. Slice it into three 8mm thick pieces, with the peeled part facing out.
- Put baking paper on the baking tray, arrange the eggplants.
- Add a little salt on it and rub it with approximately 6 tablespoons of olive oil on both sides of the eggplants with a brush.
- Place the meatballs between the eggplants . Put the tray in oven and bake for 10 minutes. (turn the tray in 5 mins to make sure every angle of the tray is cooked well.)
- Add 2 tablespoons of olive oil to the sauce pan. Add 3 finely chopped garlic cloves and 1 tablespoon of tomato paste and stir till they are mixed and cooked well.
- Add the mixture of salt, black pepper and oregano to sauce pan.
- Add 3 grated tomatoes and sugar and vinegar to balance the acidity of the tomato. (Hint: Depends on what type of tomato you use, the release of its juice may differ. If it does not release much water, you can add half a glass of hot water on the mixture).
- Put the eggplants on the counter as a plus. Place 2 meatballs in the middle and insert a toothpick into it. On the upper part of the toothpick, put a slice of tomato cut into half moons and a piece of pepper.
- Arrange the Islim kebabs on the tray and pour the tomato sauce on it.
- Reduce the temperature of the oven to 350 F, run it upside down and place it on the middle shelf of the oven.
- Place the islim kebabs that come out of the oven on the rice with their sauce. And it is ready when you sprinkle the parsley leaves on your Islim Kebab.
